I’ve never thought of doing a savory cheesecake before. However, when you read the ingredient list, it says yes, I think I’d taste pretty good. The use of the crushed tortilla chips is a perfect crust and has given me all kinds of new ideas for savory pies. Well, let’s get this party started! The SuperBowl is in a few days!
- 1 cup of finely crushed tortilla chips
- 3 Tbs of melted butter
- 2 packages of cream cheese
- 2 eggs
- 8 ounces of shredded cheese – monterey jack, colby cheddar you choose or blend
- 4 ounces of chopped green chilies
- 1 cup sour cream
- 1 cup diced orange or yellow bell pepper
- 1/2 cup sliced scallions
- 1/2 cup chopped tomatoes
- 1.4 cup sliced black olives
Okay let’s make this: Heat oven to 325 farenheit.
Stir crushed tortilla chips and butter together in a small bowl. press into a 9 inch springform pan. Place in oven and bake for 15 minutes.
While the corn chip crust is baking, beat the cream cheese and eggs together in a bowl at medium speed with electric mixer until well blended. Stir in cheese and green chilies. Pour over crust when crust comes out of the oven. Smooth to even over all of crust and return to oven for 30 minutes. Smooth sour cream over top of cheesecake once it comes out of the oven. Allow to cool completely several hours or overnight. Remove springform pan. Before serving top with remaining ingredients. Serve with crackers or tortilla chips. Serves 16-20 people.
