Waldorf Salad, dinner in 10 minutes!

A salad of choped apples, celery, walnuts, raisins and chopped chicken.

Waldorf Salad, my version

Waldorf Salad. The perfect fall light supper. And so quick and easy to make. It is simply 2 apples, 2 stalks of celery, and a handful of walnuts. Core and chop your apples. Split the celery stalks down the middle lengthwise and chop into small pieces. Grab a handful of California walnuts and toss them into the bowl. I added a one ounce box of raisins, because I had them on hand. I also had some leftover chicken from Sunday, that I skinned and de-boned and chopped up to add also.

Now make a quick milk dressing. A half cup of mayonnaise, a tablespoon of sugar, a tablespoon of vinegar and about a tablespoon and a half of milk. Whisk together and  pour over fruit and nuts. toss together. And you’ve got dinner ready! I also added the Chinese Fried Walnuts I made on Saturday, yes there were a few left, and it added the best dimension to this salad. I’m going to keep them on hand for times like this.

We have an apple tree in the backyard. Now, if we can get to the apples before the dog eats them all, we might be able to pull this off. I love a good Waldorf salad, but like Nancy, haven’t had one in ages. Thanks for the reminder. I like the Chinese walnut spin on it! :o)

Nancy, you’ll definitely have to make the walnuts as well! They rounded out all the flavors. The Waldorf, sigh, it is such a great salad, why did I forget about it for so long? Thank goodness it’s apple season!

One word… YUM!! I haven’t had a Waldorf in ages… and now is the perfect season for one!!
I am definitely going to have to make the Chinese Fried Walnuts to go with it though… I can tell they just make the salad!!!
