Sierra Nuggets Guittard Cookies

Oatmeal chocolate chip cookies on a plateThe cookie I’ve chosen to bake for the BlogHer Food 2010 Pity Party is the Guittard Sierra Nuggets. We’ve been baking this cookie at our house since the early 80s. The recipe was on the back of of some Guittard Semi-sweet Chocolate Chips and one day decided to give them a try. They have so many ingredients, it pleases everyone. Well, everyone except my brother-in-law, @gottabesmee’s husband. He doesn’t like coconut no matter how it’s used in a recipe.

I know I have daughters living far away right now going now fair! Well, girls, you will have the recipe now, go get the stuff and get baking! Here’s the recipe:

Set oven to 350°

Cream together until smooth:

  • 1 cup butter (for softer cookies use butter flavored crisco)
  • 1 cup brown sugar
  • 1 1/2 cups granulated sugar

Add in:

  • 1 Tablespoon milk
  • 1 1/2 teaspoon vanilla (I double it)

Beat and add :

  • 2 eggs

Stir and add in:

  • 1 cup fresh crushed cornflakes
  • 3 cups oatmeal (uncooked, rolled oats)

Sift together and add, mixing thoroughly:

  • 1 1/2 cups all purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon mace*
  • 1 1/2 teaspoon cinnamon*
  • 1/4 teaspoon nutmeg*
  • 1/8 teaspoon ground cloves*

Stir in:

  • 4 oz coconut
  • 12 oz semi-sweet chocolate chips
  • 1 cup toasted walnuts, or substitute peanuts or pine nuts, chopped

Drop by teaspoon onto parchment lined baking sheet. Bake 10 minutes. Yield approximately 8 dozen.                 * or to your taste

I had to chuckle while typing this as I have always read it to say drop by tablespoons onto baking sheet. Now I know why I only ever get 3 and a half dozen out of this recipe.cookies baked in oven. cool and eat with a glass of milk.
